Heheheeh I amde mayo out of need, not because I'm supermom lol. I needed mayo to make tartar sauce (I made fish and chips for lunch) and I simply forgot to buy mayo :) So I made some.

It is real easy too:

1 Egg yolk, 1 cup oil.

Beat the egg yolk. SLOWLY drop for drop add the oil, while whisking fast. Don't stop whisking.
After you have added about 1/2 of teh oil, squeze in some lemon juice, a few drops should be enough. Your mayo will now be more white, where previously it was more yellow. SLOWLY again add more oil, while keeping on with the whisking. You can now add greater amounts of oil, not drop for drop anymore, but not all at once, (hope that makes sense). Now add more lemon juice, or even vinegar to taste. Give it a final whisk and your done.

Use withing 2 days, as it contains raw egg and no preservatives :)

It tastes good too... I had to fight the kids ove rit lol an dit was HARD to convince tehm to leave some for dh to taste.

Next time, I will add some cream to make it even creamier.
Add some salt

O yes-

Shaun is now 11 months and 2 weeks old - finally got his first tooth about 4 weeks ago and started crawling last Saterday... so glad he has reached these milestones now....

here is a pic of what he was to what he is now... Mamma se groot mannetjie
