Will answer your questions in number format - I like structure!
1. Gumming meat is fine, just remember that meat will not be the only source of protein in her diet (cheese, eggs etc will also attribute) the thing with meat is more the iron than the actual protein and the iron is found in the juice of meat anyway, so that is 100% Chicken is easier to gum off pieces and swallow so try and incorporate chicken 2 to 3 times a week if you don't serve too many other forms of protein.
2. Fruit over veggies is fine. Give as much fruit as you want or can. But also keep adding veggies so she can just try it out.
3. As they are allowed to play with food more and more they learn how much force or pressure they have to exert on certain objects, so this will get loads better with practice. B started off with smashed banana and now (around 9/10 months) she can hold a whole banana without squishing it.
4. You can give her things like mince, if she doesn't yet have her pincher grasp she won't really be able to pick it up one by one but will try a fist full which also works fine. Again, the more practice the easier the pincher grasp to master
5. I always gave 3 different things (3 pieces of 3 different things) if lets say I give her chicken, butternut and potato and she doesn't eat the potato I'll just leave her, if she finishes the butternut she gets more till she's done.
6. It's never too late to start BLW. As long as you only do it supervised (as I know you will) and with her sitting up.
7. I think as long as there are other things of texture in her daily meals she won't just want the smooth yoghurt. Guard against given her only yoghurt because she didn't eat a lot at dinner. It can create a bit of a problem if she now understands that she doesn't have to eat because she will get yoghurt. For us yoghurt is an occasional treat and B gets it whether she had loads of dinner or only a little, so B isn't holding out for the yoghurt only - if that makes any sense.
No where in your question did I see a sign of a paranoid mommy, it's all normal good questions to ask.
